Holiday Freezer Cooking and a Recipe

Some of you know that I have done a little freezer cooking recently and think it is absolutely great!  I have used some of my own recipes and found some on other sites and it really couldn't be easier.  We received a ton of broccoli from our CSA a few weeks ago and knew that there was no way we could eat it all before it went bad, so I made two huge pots of soup and froze them.  I now have 3 bags of soup and 4 single serve cups of soup ready to go at any time.  How awesome is it to know that you have something in the freezer ready for you if needed?  Here is one of the recipes I used!

Canadian Bacon, Broccoli and Corn Chowder
Recipe from Weight Watchers
Servings: 4
Points: 6

1 tsp canola oil
12 medium scallions, sliced
3 oz Canadian-style bacon, diced
4 cups broccoli, chopped
2 Tbsp all-purpose flour
3 cups milk
2 cups fresh or frozen corn kernels
1/2 tsp table salt
1/2 cup Sharp Cheddar Cheese, shredded
1/8 tsp black pepper

Heat the oil in a nonstick Dutch oven over medium-high heat. Add the scallions and bacon. Cook, stirring occasionally, until the scallions are softened and the bacon is cooked, about 7 minutes. Add the broccoli. Cook, stirring occasionally, until the broccoli is slightly softened, 3–5 minutes.

Sprinkle in the flour and cook, stirring constantly, until the flour is lightly browned, 1–2 minutes. Gradually stir in the milk. Cook over medium heat, stirring constantly, until the mixture bubbles and thickens slightly, about 5 minutes. Stir in the corn and salt. Cook, stirring occasionally, until heated through, about 3 minutes.

Remove the soup from the heat. Add the cheese and pepper and stir until the cheese melts. Yields 1 1/3 cups per serving.
